THE FOOD MUSEUMS

A city of aristocratic cultural and musical traditions, rich in celebrated monuments and precious art works, Parma is also the Capital of Taste and good cuisine. The glorious products of the Parma area - Parmigiano Reggiano, Prosciutto di Parma, Salame Felino, Culatello of Zibello, Tomato Purée, Pasta, Wine from the hills, Porcini mushroom from Borgotaro and Fragno Truffle  - find in the Museums of Food a special place for their story and promotion.

The Museums of Food in Parma" is a museum network dedicated to the culinary excellence of Made in Italy. The nine museums are located throughout the province of Parma and narrate the history, culture, traditions, as well as the developments in the food industry of this part of Italy, which is the green heart of the Food Valley.
The route that connects the museums begins in the Bassa Parmense, where the long Po River flows. Here, we find the Museum of Culatello di Zibello, housed inside the Antica Corte Pallavicina, which is famous for its extraordinary cellar for aging culatello. A few kilometers away, you'll find the Parmigiano Reggiano Museum of Soragna, located inside an ancient 'Casello' that was used for centuries for cheese production. Traveling south, you'll arrive at the Pasta Museum and the Tomato Museum, both situated within the ancient Giarola Court, a picturesque medieval agricultural complex built in the middle of the Taro river park. As you reach the hills, you'll find the Wine Museum, located within the ancient cellars of the Rocca di Sala Baganza, and the Salami Museum of Felino, housed in an old building in the hamlet of Felino. The journey continues, arriving at the Parma Ham Museum, located inside the former Foro Boario in Langhirano, the main production center for this unique delicacy known worldwide for its sweetness. Moving into the Apennine Mountains, you'll discover museums dedicated to the Borgotaro IGP Porcini Mushroom and the Fragno Truffle Museum in Calestano.

 
 

 

 

THE PARMIGIANO REGGIANO MUSEUM

The history, ancient culture and culinary excellence of the "King of Cheeses" take shape through hundreds of objects and images in an old vintage cheese factory used for centuries in the production of Parmigiano Reggiano. Here you can experience the stages of milk processing, the slow maturation and marketing of the cheese, the fundamental role of the Parmigiano Reggiano Consortium in the protection of the quality, and the priceless joy of cheese tasting.

THE PASTA MUSEUM

In the enchanting scenery of the Court of Giarola, a journey through the history of pasta, through a rich series of images, documents, movies, reproductions and reconstructions. From the wheat kernel to flour, from a real mill to tools for household use, passing through the first industrial production and modern technology, to close with a large collection of vintage advertising: a 360 ° view of the world of pasta, to emphasize the role that this food, synonymous with Italy in the world, has played and continues to play in gastronomy, art, culture and life of all of us.

THE TOMATO MUSEUM

Around an ancient production line of preserves unfolds the story of the tomato, starting with its arrival from distant America in the sixteenth century, to the first tentative gastronomic approaches, to the varieties and growing techniques. It then moves on to explore the extraordinary diffusion in the Parma area during the late nineteenth century, to the emergence of a powerful canning and mechanical industry, of the Experimental Station and of the Fairs. Photos and historical documents, rare footage, models and interactive displays, packaging and can openers, publications, curiosities and copyrighted recipes tell the world of the "red gold" right up to its irresistible triumph on the dining room table.

THE PARMA WINE MUSEUM

In the evocative wine cellars of the Rocca di Sala Baganza unfolds an exhibition and sensory experience dedicated to the wine of Parma, its history and its culture. Six different sections that run from the archeology of wine in the Parma area to viticulture and the characteristics of the vine, the grape harvest and the preparation of wine to the fascinating renaissance ice box, from the history of containers and related crafts to the history of cork, the corkscrew and the label, from the pioneers of the industry to the wine cellars to visit, and finally to the role of the Consortium of the Wines of the Hills of Parma.

THE FELINO SALAMI MUSEUM

The museum is located within an 13th-century court, in the heart of the town of Felino. The tour showcases the black Parma pig, gastronomy, butchery and homemade sausage production, with a large collection of vintage images, antiques and movies with testimonies and poignant moments reminiscent of the ancient technique of production, up to the current technology of the quality and the indispensable tasting of the "Prince of Salami".

THE "PROSCIUTTO DI PARMA" (PARMA HAM) MUSEUM

Photos and historical documents, tools, machinery and movies tell of the production process of the quality products of the ''The Art of Parma Salumaria", in a sort of idealized journey from the ancient butchery methods to today's production processes: from the races of pigs to the basic function of salt, from the gestures of the ancient art to the delights of gastronomy, up to the role of the Consortium of Prosciutto of Parma in the safeguarding of the quality, culminating in the unique sweetness of the tasting.

THE CULATELLO OF ZIBELLO MUSEUM

The story of Culatello, the supreme delight of this land shaped by the Great Po River, is intimately tied to the Black Swine of Parma, the salt water wells in Salsomaggiore and the ability of the “massalén”, master butchers who handed down their knowledge for generations. A section of the exhibit is dedicated to Saint Anthony the Abbot and the history of the Spigaroli Family, originally sharecroppers for Giuseppe Verdi and today restaurateurs.
In the large underground room,  the theme of product technology is developed, starting with pork meat, the qualities of salt and pepper, to the description of the main cold cuts of the Lowlands of Parma. The history of Culatello follows, featuring quotes from famous personalities, from the poet D’Annunzio to the novelist Guareschi. The fascinating gallery of Culatello and the Hostaria, end the exhibit dedicate to the King of Cold Cuts. There, it is possible to enjoy sampling. The museum experience is completed by Po Forest, a path to discover the woods of the floodplains and the pig farm in the wild.

PORCINO OF BORGOTARO MUSHROOM MUSEUM

Mushrooms have been part of human diet since prehistoric times, especially among Mediterranean and Eastern civilizations. This is evidenced by archaeological findings from the Terramara di Castione Marchesi. They were known for their sensory characteristics even in ancient Rome, where they were consumed extensively, especially in the imperial banquets of the "Caesars."

The Porcino - Boletus edulis - from Borgotaro, Italy's first IGP (Protected Geographical Indication) mushroom, also boasts great fame. Appreciated by the Farnese dukes and mentioned in gastronomic literature from the 18th and 19th centuries, this mushroom has stimulated authentic harvesting practices in the Apennine woods and a commercialization that now enables us to fully appreciate its exceptional qualities in a multitude of diverse recipes.

TRUFFLE OF FRAGNO MUSEUM

The ancient underground prisons of Calestano, a village in the beautiful Val Baganza, house the museum dedicated to the Fragno Truffle (Tartufo di Fragno), describing its millennia-old history intertwined with local families and many other curiosities. The museum narrates the truffle hunt with dogs, mysterious botany, amidst unmistakable aromas and curious strategies for the reproduction of this subterranean fungus, all the way to gastronomy. A section is devoted to the captivating lands where it thrives: among villages and castles, the “Salti del Diavolo” (Devil's Leaps) with the stonecutters' route, pristine woods, and unforgettable landscapes.

VISIT THE BASILICANOVA DAIRY

The dairy is in Basilicanova, in the municipality of Montechiarugolo, a village near the city of Parma, and began its activity about 80 years ago. The main production is Parmigiano Reggiano, with about 5,000 wheels per year. In addition, ricotta, butter, caciotta and pannacotta are also produced.
A sales outlet has been in operation since 2015.

VISIT THE LELLI PIETRO GIOVANNI SRL DAIRY

Bontà di Latte and the Lelli Pietro Giovanni Srl dairy is a family business driven by a passion that dates back in time. Lelli Pietro began working as an apprentice in the early 1960s in a dairy in Montechiarugolo. It was there that he learnt the art of Parmigiano Reggiano and fell in love with the craft. 
After completing his year of military service, he decided to return to work in the industry and opened his first dairy in San Polo di Torrile. His first years as a cheesemaker gave him the joy of creating a family with his wife Giovanna, his two children and the satisfaction of seeing the company grow.
In 1975 he was called to work as Master cheesemaker in Montechiarugolo and over 39 years, with enthusiasm and dedication, he managed to increase the production from 10 to over 60 Parmigiano Reggiano wheels per day. Today, 60 years after the first wheel, although retired, he continues to work with the help of his daughter Federica, to whom he has taught everything, and his granddaughter Nicole. 
Now you will find us in Monticelli Terne, intent on creating top quality Parmigiano Reggiano for you, with the love and dedication that Pietro has been able to pass on for two generations. We don’t stop there: our passion for taste gives birth to fresh km 0 cheese, yoghurt and desserts.

VISIT THE CASTLE IN MONTECHIARUGOLO

The Montechiarugolo fortress, erected by Guido Torelli in the 15th century on the remains of the previous castle, was built for defensive purposes and still retains its warlike structure intact: loopholes, machicolations, ramparts, moat, etc. During the 16th century, it was transformed into a residence by Pomponio Torelli, a humanist, poet and author of tragedies, as well as a friend of artists such as Cesare Baglioni, whom he called to decorate the castle rooms.
The ground floor includes the entrance garden, the courtyard of honour and, the reception rooms and the magnificent loggia looking over the Enza torrent.
On the upper floor the galleries house two small prisons and what remains of Pomponio Torelli’s library, now dispersed but consisting of more than 1,000 volumes. The view from the top is remarkable.

VISIT VILLA SORAGNA:

A COUNTRY OF LAND AND INGENUITY EXHIBITION

Reconstructing the vicissitudes of a town through photographs stored in archives and kept in drawers at home, cross-referencing collective memory and private memories to tell the story of urban spaces and that of the people who passed through them. This is what we wanted to do with this exhibition, which aims to tell the story of a century of life in Collecchio.

A small community that, over the course of the 20th century, followed in the same steps as Italian history and can therefore become a symbol of it, a ‘micro' point of view from which to look at the great transformations that have swept through the entire country and which allows us to better understand and recognize them in the everyday streets, in the faces and clothes of the people who inhabited them.
